Beef short ribs come out slimy after cooked... Cook longer? (Instapot)

Hello, So I've tried to make short ribs in my instapot a couple (~4). The second time I did it was amazing and I've been chasing that texture ever since. Whoever every other time I do it, the meat comes out still very noticable fatty and with a slimy texture..... I was thinking about this today and I wondered if I need to be cooking longer in order to render more of the intermuscular fat? Basically the meat itself seems to be a reasonable texture but overall the piece us quite slimy and chewy because there is still fat throughout the meat.
