Burger Sauce has a grainy texture after adding onions that were fried in clarified butter.

While creating a burger spread for a backyard grilling, I noticed that the sauce became grainy in the fridge after adding the caramelized onions, which were fried in clarified butter. The clarified butter itself was grainy/fluffy before frying, but I didn’t think it would create such a big issue when using it.
