Can someone plz explain what is the use of baking soda?

In general, what is baking soda and what is the use of it in culinary? Like in bread we usually use yeast, but in some recipes they substitute yeast with baking soda, like how does baking soda differs from yeast when making bread? Does it makes it fluffier? Or maybe softsr bread? Or mushier???? What about cakes??? Some recipes require the egg to be very beatten up to incoporate air in it, while other recipes require the use of baking soda And pancakes which require baking soda Or maybe caramalised onions which also require baking soda One final thing, can i substitute baking soda with anything else? submitted by /u/silentshot546 [link] [comments]
