Chocolates filled with custard or mousse - left at room temperature?

Hi all, I wanted to make some chocolates with a chocolate shell and fill them with a mousse or a custard, but realised those things aren't usually left out of the fridge. Is there an easy way to make those types of or similar fillings at home that don't need to be refrigerated?
