First Pumpkin Pie Attempt Advice

Hello everyone! So for Christmas this year I wanted to try my hand in making a legit US style pumpkin pie, I tried a slice when I was there a few years ago and loved it, now I want to recreate it. I want to make the entire thing from scratch (we dont even get canned pumpkin puree here in South Africa) I have found a crust and filling recipe but I just had some things to ask before the big attempt: Do you need to dock the crust before blind baking it? Or do you do it halfway through? Different recipe videos do different things... Also to maximise the potential of it and do it right, how does this sound?: Make the pie crust on the 23rd December and fridge overnight then blind bake the crust and then bake the filling on the 24th and fridge overnight. Serve on the 25th? Seems I am being a bit overboard with it, but I want to give it the best shot at coming out well!
