Flavor profiles for a limited diet?

I am having to change my diet because of chronic illness and I am now supposed to avoid spicy foods, dairy, citrus, tomatoes, and other acidic foods (and trying to stay away from processed foods in general). I love cooking, but so much of the flavor profiles I’m comfortable with creating rely on spicy and acidic foods. What are some of your favorite flavor profiles/ingredient combos for flavorful, interesting food that steer clear of these ingredients?
