Peppers taste “metallic” - how to fix?

My partner used to love peppers, until he got covid. When his sense of taste returned, all mild/sweet peppers (e.g. bell) leave a metallic aftertaste. Is there anything I can do to mitigate this? I’ve tried removing the skins by searing over an open flame, which helps a little bit, but are there any other techniques I can try? At the moment I mainly prepare peppers separately and add them to my servings, but this doesn’t work for recipes where peppers are an integral part (bye bye Creole shrimp sauce). Luckily spicy peppers such as jalapeño and hot sauces don’t have this aftertaste for him. It’s just the sweet ones that taste weird.
