Searing steak indoors

I usually cook steak outside. I have a komado with a soap stone and it works really well. It's currently -25 outside so I decided to try indoors. I was making mini beef wellies and wanted to do a crazy hot fast sear. I dialed the oven top to max (electric, glass top) and let the cast iron get hot. I gave it a shot of oil right before I tossed on the steak and it immediately evaporated and smoked out the house. Once it calmed down I went oil free, steaks seared instantly but made a ton of smoke. The smoke alarm is mad at me for all of this l, even with the door open, the range hood on mac and an air purifier in the kitchen. What temperature should I be looking for on the stove top to sear without cooking the steak like in wellies? How do can I measure my pan heat? Is it just something that isn't practical do do in a home kitchen? Is an IR gun the only way? How do you balance the heat on a cast? The other downside is my cast shed some of its seasoning. Is that from the high heat? submitted by /u/mydogisamy [link] [comments]
