Types of sausages
I've been exploring more Irish, Welsh, and English cooking lately and a lot of recipes call for sausage but don't specify what kind. I live in the northeast US and have access to sweet/hot Italian sausages, chorizo, andoullie, breakfast, and occasionally Chinese style sausage.
