What to do with leftovers from making oxtail

So, recently I made the following simple recipe for oxtail: Take the oxtail, put it in a heat-proof plastic bag along with 1.5 cups of water, 0.75 cups of soy sauce, some cloves, ginger, bay leaves, garlic, cardamom pods, a little vinegar, and some more stuff -- basically "whatever comes to mind when looking through the cupboard that might be nice". Then sous vide the entire thing at 82C for about twenty hours. Most of the meat has already been eaten, except for two pieces. Since the meat just fell off the bones clean, I put the leftover bones in a bag in the freezer, and I poured the liquid into a pot in the fridge. Now, of course, there's a layer of fat on top and underneath there should be some pretty gelatinised broth. What is the best way to store these leftovers? (I haven't even separated off the fat from the liquid yet.) I assume the liquid can be used for something, and the fat too, right, but are the bones already leached of all their, uh, boniness, or can they be reused too?
